mailserver with exim instead of postfix, dockerized setup with antispam?

We are currently evaluating GroupOffice as a successor to our aging Atmail groupware.

For the setup of the mail server we used the install manual at:

Yet "groupoffice-mailserver" (a) seems to work only on Debian and also relies on postfix as the MTA, whereas we'd like to stick with exim (as that#s what we became familiar with over the years).

Additionally, we saw "groupoffice-mailserver-antispam" (b) and "docker-groupoffice-mailserver" (c) on github.

1) What would be the suggested way to install the mail server for group-office - (a), (b) or (c)?
2) We'd prefer a Docker based solution but would also need AV/Antispam features like Spamassassin, rspamd and ClamAV. Is there also a "dockerized" setup that includes these?

Hints and suggestions are highly appreciated.
